  • 1 lb boneless chicken breast, cut into bite-sized pieces
  • 2 fresh jalapeños, sliced (seeds removed for less heat)
  • 1 cup bell peppers, sliced (red or yellow)
  • 1 medium onion, sliced
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 tablespoons cooking oil (vegetable or sesame)

Instructions

  1. Prep your ingredients by slicing the chicken, jalapeños, bell peppers, onion, garlic, and ginger.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add onion, bell peppers, jalapeños, garlic, and ginger; stir-fry for about 3-4 minutes until softened.
  3. Push the vegetables to one side of the pan and add another tablespoon of oil if needed. Add the chicken pieces and cook until browned on all sides (5-7 minutes).
  4. Mix soy sauce with cornstarch in a bowl until smooth. Pour the mixture over the cooked chicken and veggies; stir to coat evenly.
  5. Continue cooking for an additional 2-3 minutes until the sauce thickens slightly.
  6. Serve immediately over rice or noodles.
