- 2 lbs beef chuck, cut into 1-inch cubes
- 3 medium carrots, diced
- 4 medium potatoes, peeled and chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Preheat your oven to 325°F (160°C).
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the beef with salt and pepper, then sear until browned on all sides (about 3–4 minutes per side). Remove from pot and set aside.
- In the same pot, add onions and garlic; sauté until translucent (about 3 minutes). Add carrots and cook for another 5 minutes.
- Pour in the beef broth along with thyme and rosemary. Stir well and bring to a gentle simmer.
- Layer chopped potatoes on top of the mixture without stirring them in.
- Cover the pot with a lid or aluminum foil and bake for about 2 hours or until the beef is fork-tender.
