  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 1 lb baby potatoes, halved
  • 4 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a large baking sheet with nonstick cooking spray.
  2. In a bowl, mix minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Coat chicken with olive oil and roll in the garlic-Parmesan mixture.
  3. Place halved potatoes in another bowl, drizzle with olive oil, season with salt and pepper; toss to coat evenly.
  4. Arrange chicken on one side of the baking sheet and potatoes on the other, ensuring space between them.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender with crispy edges.
