Ingredients

  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 4 cups kale (about 120g), stems removed, chopped
  • ½ cup walnuts or almonds (about 60g), roughly chopped
  • 3 tablespoons olive oil, divided
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes in 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet.
  3. Roast sweet potatoes for 25-30 minutes until golden brown and tender, flipping halfway through.
  4. While the sweet potatoes roast, rinse and chop the kale into bite-sized pieces. Massage with 1 tablespoon of olive oil until softened.
  5. In a large bowl, combine the roasted sweet potatoes with kale and add walnuts or almonds.
  6. Drizzle the salad with the remaining olive oil and lemon juice; toss well to combine. Serve immediately or chill before serving.
