Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced sweet potatoes in 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet.
- Roast sweet potatoes for 25-30 minutes until golden brown and tender, flipping halfway through.
