  • 4 oz cream cheese (softened)
  • 2 tbsp powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat brown sugar and softened butter until fluffy. Add shredded carrots and vanilla; mix well.
  4. Gradually combine the dry mixture into the wet mixture until just blended.
  5. Scoop dough onto baking sheets about two inches apart.
  6. Bake for 12-15 minutes until edges are golden. Cool on sheets for five minutes before transferring to wire racks.
  7. Spread cream cheese frosting on cooled cookies.
