  • ½ medium red onion, diced
  • ½ cup fresh cilantro, chopped
  • ¼ cup lime juice (about 2 limes)
  • ½ cup mayonnaise
  • ⅓ cup crumbled Cotija cheese
  • 1 medium poblano pepper, grilled and chopped
  • Salt and pepper to taste

Instructions
