  • 8 oz (225 g) short pasta (fusilli or penne recommended)
  • 2 cups (300 g) cherry tomatoes, halved
  • 8 oz (225 g) fresh mozzarella balls (bocconcini), diced
  • 1 cup (30 g) fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Cook pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
  2. In a large bowl, combine warm pasta with olive oil.
  3. Gently fold in cherry tomatoes and mozzarella until evenly distributed.
  4. Add torn basil leaves to the bowl.
