- 6 cups low-sodium chicken broth
- 2 tbsp low-sodium soy sauce

Instructions
- Prepare all ingredients by washing and chopping vegetables; dice the chicken into bite-sized pieces.
- In a large pot over medium heat, add olive oil. Once hot, sauté minced garlic and grated ginger until fragrant (about 1 minute).

- Pour in chicken broth and soy sauce; bring to a boil while scraping any brown bits from the bottom of the pot.
