- 2 tbsp extra virgin olive oil
- 1 medium onion, chopped
- 3–4 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cans (14.5 oz each) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed
- 2 tbsp chili powder
- 1 tsp ground cumin
- Fresh cilantro for garnish
Instructions
- Cut the chicken into bite-sized pieces. In a large pot, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until browned (5-7 minutes).
- Add onions and garlic; sauté until translucent (3-4 minutes). Stir in bell peppers and cook for another 3 minutes.
- Pour in the diced tomatoes and add the rinsed kidney beans. Mix well.
- Sprinkle chili powder and cumin; stir to combine. Let simmer on low heat for about 20 minutes.
- Adjust consistency with water or broth if desired. Taste and adjust seasoning.
