  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp yellow curry powder
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 2 bell peppers, thinly sliced
  • 1 yellow onion, sliced
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Trim excess fat from the beef chuck roast and cut into large chunks. Season with salt and pepper.
  2. In a large skillet over medium-high heat, add oil and sear the beef until browned on all sides (about 3-4 minutes per side). Remove from skillet.
  3. In the same skillet, sauté garlic, ginger, onions, and bell peppers until softened (about 5 minutes).
  4. Pour in coconut milk and stir in curry powder. Scrape up any browned bits from the pan.
  5. Return the seared beef to the skillet, cover, and let simmer on low heat for 2-3 hours until fork-tender.
  6. Shred the beef using two forks and mix it back into the sauce before serving over rice or noodles.
