  • 1 cup canned pumpkin puree
  • 8 oz Italian sausage (spicy or mild)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, cook the Italian sausage until browned. Remove and set aside.
  3. In the same skillet, add olive oil if necessary, then sauté minced garlic for about 30 seconds until fragrant. Add fresh spinach and cook until wilted.
  4. Stir in pumpkin puree and heavy cream; let simmer for 5 minutes.
  5. Return the cooked sausage to the skillet along with drained pasta. Toss everything together, adding reserved pasta water as needed to achieve desired consistency.
  6. Serve hot, garnished with grated Parmesan cheese.
