  • 2 shallots (finely chopped)
  • 2 tbsp Dijon mustard
  • 1 egg (beaten, for egg wash)
  • Salt and pepper (to taste)
  • Olive oil (for searing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season the beef tenderloin with salt and pepper. In a hot skillet with olive oil, sear each side for 2-3 minutes until browned. Remove from heat and let rest.
  3. In the same skillet, add shallots and mushrooms; sauté over medium heat until moisture evaporates (about 5-7 minutes). Set aside to cool.
  4. Roll out puff pastry on a floured surface; cut into squares that can fully enclose the beef pieces. Spread Dijon mustard on each square, top with mushroom mixture, then place beef on top.
  5. Fold pastry over filling, sealing edges tightly. Brush with egg wash.
  6. Bake for 20-25 minutes until golden brown. Serve warm.
