  • 4 cups kale leaves, chopped (about 1 bunch)
  • 1 pound chicken breast, cooked and sliced
  • ½ cup peanuts, roughly chopped
  • 1 bell pepper, thinly sliced
  • 1 cup shredded carrots
  • ¼ cup cilantro, chopped
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 clove garlic, minced
  • Juice of 1 lime
  • 1 tablespoon honey (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Rinse and dry the kale leaves; remove stems and chop.
  2. Cook the chicken breast in a skillet over medium heat for about 6-7 minutes per side until golden brown. Allow cooling before slicing.
  3. In a bowl, whisk together peanut butter, soy sauce, garlic, lime juice, honey (if using), sesame oil, salt, and pepper until smooth.
  4. In a large bowl, combine kale, sliced chicken, bell pepper, shredded carrots, chopped peanuts, and cilantro. Drizzle with dressing and toss to coat.
  5. Chill for 30 minutes if desired before serving.
