Ingredients

  • 2 medium eggplants (about 1 lb or 450g)
  • ½ cup tahini
  • 2 cloves garlic, minced
  • Juice of 1 large lemon (about 3 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon ground cumin
  • ½ teaspoon salt (or to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplants in half lengthwise. Score the flesh and drizzle with olive oil and salt. Place cut-side down on a lined baking sheet.
  3. Roast for 30-40 minutes until tender and slightly charred. Let cool slightly.
  4. Scoop out the flesh into a food processor, discarding skins.
  5. Add tahini, garlic, lemon juice, cumin, salt, and olive oil to the processor. Blend until smooth and creamy.
  6. Taste and adjust seasoning as desired before serving chilled or at room temperature.
