- 2 medium eggplants (about 1 lb or 450g)
- ½ cup tahini
- 2 cloves garlic, minced
- Juice of 1 large lemon (about 3 tablespoons)
- 2 tablespoons extra virgin olive oil
- ¼ teaspoon ground cumin
- ½ teaspoon salt (or to taste)
- Fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the eggplants in half lengthwise. Score the flesh and drizzle with olive oil and salt. Place cut-side down on a lined baking sheet.
- Roast for 30-40 minutes until tender and slightly charred. Let cool slightly.
- Scoop out the flesh into a food processor, discarding skins.
- Add tahini, garlic, lemon juice, cumin, salt, and olive oil to the processor. Blend until smooth and creamy.
- Taste and adjust seasoning as desired before serving chilled or at room temperature.
