  • 1 lb (450g) ground turkey
  • 8 corn or flour tortillas
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 cup (100g) shredded cheese (cheddar or Mexican blend)
  • 1 cup (240g) salsa
  • ¼ cup (10g) fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Once hot, add ground turkey and cook until browned.
  3. Stir in black beans, salsa, cumin, chili powder, salt, and pepper; cook for an additional 5 minutes until heated through.
  4. In each tortilla, place about ¼ cup of the turkey mixture, sprinkle with cheese, roll tightly and place seam-side down in a baking dish.
  5. Pour remaining salsa over the enchiladas and top with extra cheese.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
