- 1 cup (150g) Fresh or frozen raspberries, divided
- 16 oz (450g) Cream cheese, softened
- 3/4 cup (150g) Granulated sugar, divided
- 2 large Eggs
- 1/4 cup (60g) Unsalted butter, melted
- 1 1/2 cups (150g) Graham cracker crumbs
Instructions
- Preheat your oven to 325°F (160°C) and grease a heart-shaped muffin pan.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar until well mixed. Press into the bottom of each muffin cavity.
- Beat the cream cheese and remaining sugar in another bowl until smooth. Add eggs one at a time, mixing well after each addition. Gently fold in half of the raspberries.
- Pour the cheesecake filling over the crust in each cavity and tap gently to remove air bubbles.
- Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely before removing from the pan.
- Top with remaining raspberries and refrigerate for at least two hours before serving.
