  • 1 cup (150g) Fresh or frozen raspberries, divided
  • 16 oz (450g) Cream cheese, softened
  • 3/4 cup (150g) Granulated sugar, divided
  • 2 large Eggs
  • 1/4 cup (60g) Unsalted butter, melted
  • 1 1/2 cups (150g) Graham cracker crumbs

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a heart-shaped muffin pan.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar until well mixed. Press into the bottom of each muffin cavity.
  3. Beat the cream cheese and remaining sugar in another bowl until smooth. Add eggs one at a time, mixing well after each addition. Gently fold in half of the raspberries.
  4. Pour the cheesecake filling over the crust in each cavity and tap gently to remove air bubbles.
  5. Bake for 20-25 minutes until set but slightly jiggly in the center. Cool completely before removing from the pan.
  6. Top with remaining raspberries and refrigerate for at least two hours before serving.
