  • 2 medium Granny Smith or Honeycrisp apples, thinly sliced
  • 1 medium fennel bulb, thinly sliced
  • 4 cups fresh arugula
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Wash all produce thoroughly. Thinly slice the apples using a mandoline or sharp knife. Remove tough outer layers from the fennel bulb and slice thinly.
  2. In a large bowl, combine arugula, sliced fennel, and apples. Gently toss to mix without bruising the greens.
  3. In a small bowl or jar, whisk together lemon juice and olive oil; season with salt and pepper.
  4. Drizzle dressing over the salad mixture and toss gently to coat evenly.
