  • 2 lbs bone-in chicken pieces (thighs or drumsticks preferred)
  • 2 cups basmati rice, rinsed
  • 1 large onion, finely chopped
  • 2 medium tomatoes, diced (or 1 can of diced tomatoes)
  • 4 cloves garlic, minced
  • 3 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cardamom
  • ½ teaspoon ground cinnamon
  • ½ teaspoon black pepper
  • Salt to taste
  • ¼ cup toasted pine nuts or slivered almonds for garnish
  • Fresh cilantro or parsley for garnish

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté the chopped onions until golden brown.
  2. Add minced garlic and spices (cumin, coriander, turmeric, cardamom, cinnamon, black pepper). Cook for about 1 minute until fragrant.
  3. Add chicken pieces to the pot and sear until lightly browned on all sides.
  4. Stir in diced tomatoes and chicken broth; bring to a simmer for about 15 minutes.
  5. Mix in rinsed basmati rice, ensuring it’s evenly distributed before covering the pot with a lid.
  6. Reduce the heat to low and cook for 20–25 minutes until rice is tender and liquid is absorbed. Fluff rice with a fork before serving.
