  • 2 medium sweet potatoes (about 1 lb), peeled and cubed
  • 2 tbsp Dijon mustard
  • 3 tbsp pure maple syrup
  • 2 tbsp extra virgin olive oil (divided)
  • 3 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
