  • 14 oz firm tofu, drained and pressed
  • 1 cup brown rice (uncooked)
  • 1 can (15 oz) black beans, rinsed
  • 1 red bell pepper, sliced into strips
  • 1 cup corn (fresh or frozen)
  • 1 ripe avocado, sliced
  • ½ cup salsa (your favorite variety)
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the tofu into cubes and place them in a bowl. Toss with olive oil, cumin, chili powder, garlic powder, salt, and pepper until evenly coated.
  3. Spread the seasoned tofu on the baking sheet and bake for 25–30 minutes or until golden brown.
  4. While the tofu bakes, cook brown rice according to package instructions.
  5. Assemble each bowl by layering cooked brown rice at the bottom followed by black beans, corn, red bell pepper strips, and baked tofu.
  6. Top each bowl with avocado slices, salsa, and chopped cilantro before serving warm.
