- 14 oz firm tofu, drained and pressed
- 1 cup brown rice (uncooked)
- 1 can (15 oz) black beans, rinsed
- 1 red bell pepper, sliced into strips
- 1 cup corn (fresh or frozen)
- 1 ripe avocado, sliced
- ½ cup salsa (your favorite variety)
- ¼ cup fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the tofu into cubes and place them in a bowl. Toss with olive oil, cumin, chili powder, garlic powder, salt, and pepper until evenly coated.
- Spread the seasoned tofu on the baking sheet and bake for 25–30 minutes or until golden brown.
- While the tofu bakes, cook brown rice according to package instructions.
- Assemble each bowl by layering cooked brown rice at the bottom followed by black beans, corn, red bell pepper strips, and baked tofu.
- Top each bowl with avocado slices, salsa, and chopped cilantro before serving warm.
