  • 8 oz wide rice noodles
  • 1 cup cooked protein (chicken, shrimp, or tofu)
  • 1 cup bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 cup fresh Thai basil leaves
  • 3 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon Sriracha or chili paste (adjust to taste)
  • 2 tablespoons vegetable oil

Instructions

  1. Soak the wide rice noodles in hot water for about 10 minutes until soft but still firm. Drain and set aside.
  2. In a large pan or wok over medium-high heat, add vegetable oil and cook your protein until golden brown. Remove and set aside.
  3. In the same pan, sauté minced garlic until fragrant. Add sliced bell peppers and cook until tender-crisp.
  4. Return the cooked protein to the pan along with drained noodles. Pour in soy sauce and Sriracha/chili paste; stir well to combine.
  5. Just before serving, fold in fresh Thai basil leaves until they wilt slightly.
  6. Serve hot with optional garnishes like lime wedges or crushed peanuts.
