- 8 oz rotini pasta
- 4 oz sliced salami, cut into strips
- 8 oz fresh mozzarella balls (bocconcini)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced (any color)
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- Salt and pepper to taste
- 1 tsp dried Italian herbs (oregano and basil)
Instructions
- Cook the rotini pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled pasta with salami, cherry tomatoes, cucumber, and bell peppers.
- Gently fold in the mozzarella balls.
- In a separate bowl, whisk together olive oil, red wine vinegar, salt, pepper, and Italian herbs.
- Pour the dressing over the pasta mixture and toss until well combined.
- Refrigerate for at least one hour before serving.
