  • 2 (6 oz) skinless salmon fillets
  • 1 sheet (8 oz) puff pastry, thawed
  • 4 oz cream cheese, softened
  • 1 cup fresh spinach, chopped
  • 2 tsp fresh dill, chopped (or 1 tsp dried)
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté spinach until wilted. Remove from heat and cool slightly before mixing with cream cheese, dill, lemon juice, salt, and pepper.
  3. Roll out puff pastry on a floured surface. Place one salmon fillet in the center, top with the spinach mixture, then add the second fillet and wrap the pastry around securely.
  4. Seal seams well, place seam-side down on the baking sheet, and brush generously with beaten egg.
