Ingredients

  • 1 lb fresh or frozen shrimp (peeled and deveined)
  • 2 ripe avocados (diced)
  • 1/4 cup freshly squeezed lime juice
  • 2 cloves garlic (minced)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh cilantro (chopped)
  • 1/2 small red onion (diced)
  • 1 cup cherry tomatoes (halved)
  • Salt & pepper to taste

Instructions

  1. In a skillet over medium heat, add a splash of olive oil. Once hot, add the shrimp and cook until pink (about 3-4 minutes). Remove from heat and let cool slightly.
  2. While the shrimp cools, prepare your vegetables: dice the avocado, chop the tomatoes, finely chop the red onion, and roughly chop the cilantro. Place all chopped ingredients in a large mixing bowl.
  3. Add the cooled shrimp to the bowl with vegetables and gently toss to combine.
  4. In a small bowl, whisk together lime juice, minced garlic, olive oil, salt, and pepper until well combined.
  5. Pour the dressing over the salad mixture and toss gently until evenly coated.
  6. Serve immediately or refrigerate for up to an hour for flavors to meld.
