Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup coconut cream
  • 1/2 cup granulated sugar (for filling)
  • 2 large eggs
  • 1 teaspoon pandan extract (or equivalent fresh pandan leaves)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and butter until crumbly. Press into tart pans evenly.
  2. Bake tart shells for 10-12 minutes until lightly golden. Cool completely.
  3. In a saucepan, combine coconut cream, sugar, eggs, and pandan extract over medium heat. Stir until sugar dissolves.
  4. Pour the mixture into cooled tart shells just below the rim.
  5. Bake for another 20-25 minutes until filling is set but slightly jiggly in the center.
  6. Allow to cool then refrigerate for at least 1 hour before serving.
