- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened

- 1/2 cup granulated sugar (for filling)
- 2 large eggs
- 1 teaspoon pandan extract (or equivalent fresh pandan leaves)
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and butter until crumbly. Press into tart pans evenly.
- Bake tart shells for 10-12 minutes until lightly golden. Cool completely.
- In a saucepan, combine coconut cream, sugar, eggs, and pandan extract over medium heat. Stir until sugar dissolves.
- Pour the mixture into cooled tart shells just below the rim.
- Bake for another 20-25 minutes until filling is set but slightly jiggly in the center.
- Allow to cool then refrigerate for at least 1 hour before serving.
