- 8 oz cream cheese, softened

- 1 large egg

- 1/2 cup rolled oats
- 1/4 cup brown sugar (for crumble)
- 4 tablespoons cold unsalted butter, cubed
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- In a skillet over medium heat, cook diced apples with 2 tablespoons brown sugar and cinnamon for 5 minutes until softened.
- In a medium bowl, beat softened cream cheese and 1/4 cup sugar until smooth, then stir in the egg until combined.
- In a separate bowl, mix oats, flour, 1/4 cup brown sugar, baking powder, and salt.
- Cut cold butter into the oat mixture using a fork until coarse crumbs form.
- Divide the sautéed apples evenly among the 12 muffin cups.
- Spoon the cheesecake mixture over the apples in each cup.
- Top each muffin with a generous tablespoon of the oat crumble.
- Bake for 20-25 minutes or until the tops are golden brown.
- Cool in the pan for 5 minutes before transferring to a wire rack.
