  • 1/2 cup rolled oats
  • 1/4 cup brown sugar (for crumble)
  • 4 tablespoons cold unsalted butter, cubed
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. In a skillet over medium heat, cook diced apples with 2 tablespoons brown sugar and cinnamon for 5 minutes until softened.
  3. In a medium bowl, beat softened cream cheese and 1/4 cup sugar until smooth, then stir in the egg until combined.
  4. In a separate bowl, mix oats, flour, 1/4 cup brown sugar, baking powder, and salt.
  5. Cut cold butter into the oat mixture using a fork until coarse crumbs form.
  6. Divide the sautéed apples evenly among the 12 muffin cups.
  7. Spoon the cheesecake mixture over the apples in each cup.
  8. Top each muffin with a generous tablespoon of the oat crumble.
  9. Bake for 20-25 minutes or until the tops are golden brown.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
