Description

A vibrant autumn salad featuring crisp chopped pears, creamy goat cheese, and toasted walnuts tossed in a homemade maple-cider vinaigrette.


Ingredients

  • 4 cups mixed autumn greens
  • 2 ripe Bosc pears, cubed
  • 1/2 cup crumbled goat cheese
  • 1/3 cup toasted walnuts
  • 3 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • Salt and black pepper to taste

Instructions

  1. Toast walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant.
  2. Whisk together maple syrup and apple cider vinegar in a small bowl.
  3. Slowly whisk in olive oil until the dressing is emulsified; season with salt and pepper.
  4. Place mixed greens in a large bowl and toss with half of the dressing.
  5. Add cubed pears and toasted walnuts, folding gently to combine.
  6. Top with crumbled goat cheese just before serving.
