Description

Savory eggs baked in individual ramekins on a bed of melted sharp cheddar and crisp bacon. A high-protein, hands-off breakfast with a rich, jammy finish.

Ingredients

Scale
  • 4 large eggs
  • 4 strips of bacon, cooked and chopped
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease four 6-ounce ramekins with melted butter to prevent sticking.
  3. Divide the shredded cheddar cheese evenly among the bottom of the four ramekins.
  4. Distribute the chopped, cooked bacon evenly over the cheese layers.
  5. Carefully crack one egg into each ramekin, ensuring the yolk remains intact.
  6. Season the top of each egg with a pinch of salt and black pepper.
  7. Place ramekins on a baking sheet and bake for 12 to 15 minutes, or until whites are set but yolks still jiggle.
  8. Remove from oven and let rest for 2 minutes before garnishing with fresh chives.
