  • 4 bone-in, skin-on chicken thighs
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs completely dry with paper towels.
  3. In a small bowl, whisk together melted butter, lemon juice, lemon zest, and minced garlic.
  4. Season both sides of the chicken thighs with salt and black pepper.
  5. Place chicken skin-side up in a baking dish and pour the butter mixture over the top.
