Description

A vibrant, one-pan roast combining juicy balsamic-glazed chicken with crispy Brussels sprouts, tart cranberries, and crunchy pumpkin seeds. A perfect balance of savory, sweet, and tangy flavors.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 lb Brussels sprouts, trimmed and halved
  • 1/4 cup balsamic vinegar
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup dried cranberries
  • 1/4 cup raw pumpkin seeds (pepitas)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper.
  3. Place chicken on the pan and coat thoroughly with the glaze.
  4. Toss halved Brussels sprouts in the remaining glaze and arrange them around the chicken, cut-side down.
  5. Roast for 20-25 minutes until chicken reaches 165°F and sprouts are charred.
  6. Sprinkle dried cranberries and pumpkin seeds over the tray and roast for an additional 5 minutes.
