Description

A layered beef enchilada casserole infused with fresh garlic and herbs for a savory, comforting dinner.

Ingredients

Scale
  • 1 lb ground beef (80/20 or 90/10)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 cups enchilada sauce
  • 12 corn or flour tortillas
  • 3 cups shredded Monterey Jack or Cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350F (175C).
  2. Heat olive oil in a large skillet over medium heat and sauté diced onions until translucent.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain excess fat.
  4. Stir in minced garlic and half of the chopped cilantro, cooking for 1-2 minutes until fragrant.
  5. Stir in cumin, chili powder, and 1/2 cup of enchilada sauce. Simmer for 3-5 minutes until thickened.
  6. Spread 1/4 cup of enchilada sauce on the bottom of a 9×13 inch baking dish.
  7. Place a layer of tortillas over the sauce, overlapping slightly.
  8. Spread half of the beef mixture over the tortillas, then sprinkle with 1 cup of cheese and drizzle with more sauce.
  9. Repeat the layers: tortillas, remaining beef, cheese, and sauce. Top with a final layer of tortillas, the remaining sauce, and the remaining cheese.
  10. Bake for 20-25 minutes until the cheese is melted and bubbling.
  11. Remove from oven, garnish with remaining cilantro, and let rest for 10 minutes before slicing.
