Soft, cake-like apple cider cookies sandwiched with a rich, homemade salted caramel filling. A cozy dessert that captures the essence of autumn.


Ingredients

  • 2 cups apple cider (reduced to 1/2 cup)
  • 1 cup unsalted butter (browned)
  • 1 cup brown sugar
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1 cup granulated sugar (for caramel)
  • 4 tbsp unsalted butter (for caramel)
  • 1/2 cup heavy cream
  • 1/4 tsp sea salt (for caramel)

Instructions

  1. Reduce the apple cider in a saucepan over medium heat until only 1/2 cup remains.
  2. Brown the butter in a pan until nutty and golden, then let cool slightly.
  3. Cream together browned butter and brown sugar, then beat in eggs one by one.
  4. Fold in sifted flour, baking powder, cinnamon, and salt, then stir in the cider reduction.
  5. Scoop 2-tbsp mounds onto a baking sheet and bake at 350F for 10-12 minutes.
  6. Make caramel by melting granulated sugar until amber, stirring in butter and cream, then adding salt.
  7. Pipe caramel onto one cooled cookie and top with another.
