- 2 cups apple cider (reduced to 1/2 cup)
- 1 cup unsalted butter (browned)
- 1 cup brown sugar
- 2 large eggs
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp sea salt
- 1 cup granulated sugar (for caramel)
- 4 tbsp unsalted butter (for caramel)
- 1/2 cup heavy cream
- 1/4 tsp sea salt (for caramel)
Instructions
- Reduce the apple cider in a saucepan over medium heat until only 1/2 cup remains.
- Brown the butter in a pan until nutty and golden, then let cool slightly.
- Cream together browned butter and brown sugar, then beat in eggs one by one.
- Fold in sifted flour, baking powder, cinnamon, and salt, then stir in the cider reduction.
- Scoop 2-tbsp mounds onto a baking sheet and bake at 350F for 10-12 minutes.
- Make caramel by melting granulated sugar until amber, stirring in butter and cream, then adding salt.
- Pipe caramel onto one cooled cookie and top with another.
