Ingredients

  • 1.5 lbs boneless skinless chicken breasts or thighs, cubed
  • 1/2 cup brown sugar, packed
  • 1/4 cup soy sauce
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup pineapple juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. Season chicken cubes with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat and sear chicken until golden brown on all sides. Remove chicken from pan and set aside.
  3. In the same pan, add minced garlic and grated ginger, cooking for 1 minute until fragrant.
  4. Whisk together brown sugar, soy sauce, and pineapple juice in a small bowl.
  5. Pour the sauce into the pan and scrape up the brown bits from the bottom.
  6. Return chicken to the pan and simmer for 8-10 minutes until the sauce reduces and thickens.
  7. Stir in pineapple chunks and cook for another 2 minutes.
  8. Mix cornstarch with a teaspoon of water, stir into the pan, and heat until the glaze is glossy and thick.
