- 1.5 lbs boneless skinless chicken breasts or thighs, cubed
- 1/2 cup brown sugar, packed
- 1/4 cup soy sauce
- 1 cup pineapple chunks (fresh or canned)
- 1/4 cup pineapple juice
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons cooking oil
- Salt and pepper to taste
Instructions
- Season chicken cubes with salt and pepper.
- Heat oil in a large skillet over medium-high heat and sear chicken until golden brown on all sides. Remove chicken from pan and set aside.
- In the same pan, add minced garlic and grated ginger, cooking for 1 minute until fragrant.
- Whisk together brown sugar, soy sauce, and pineapple juice in a small bowl.
- Pour the sauce into the pan and scrape up the brown bits from the bottom.
- Return chicken to the pan and simmer for 8-10 minutes until the sauce reduces and thickens.
- Stir in pineapple chunks and cook for another 2 minutes.
- Mix cornstarch with a teaspoon of water, stir into the pan, and heat until the glaze is glossy and thick.
