- 2 cups cooked shredded chicken breast
- 1/2 cup of your favorite BBQ sauce
- 2 cups shredded Monterey Jack cheese
- 4 large flour tortillas
- 2 tablespoons unsalted butter
Instructions
- Mix shredded chicken with BBQ sauce in a medium bowl.
- Place a tortilla in a pan and sprinkle cheese over one half.
- Spread BBQ chicken evenly over the cheese.
- Fold the tortilla in half to form a semi-circle.
- Melt butter in a skillet over medium heat.
- Toast quesadilla for 3-4 minutes per side until golden brown.
- Slice into wedges and serve hot.
