Description

A festive holiday dessert featuring a moist white cake infused with a tart cranberry glaze and topped with airy whipped cream.

Ingredients

Scale
  • 1 box (15.25 oz) white cake mix
  • Ingredients required for cake mix (usually eggs, oil, and water)
  • 1 cup fresh or frozen cranberries
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 2 cups heavy whipping cream, chilled
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh cranberries for garnish

Instructions

  1. Preheat oven according to cake mix directions and bake the cake in a 9×13 inch pan.
  2. Remove cake from oven and, while still warm, poke holes across the surface using a wooden spoon handle.
  3. Combine cranberries, granulated sugar, and water in a saucepan over medium heat.
  4. Simmer the cranberry mixture for 5-10 minutes until berries burst and the liquid thickens.
  5. Pour the warm cranberry syrup over the poked cake and refrigerate for at least 2 hours.
  6. Beat chilled heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Spread the whipped cream over the chilled cake and garnish with fresh cranberries.
