  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup mixed vegetables (such as carrots and peas)
  • ¼ cup fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tablespoon cooking oil

Instructions

  1. In a large pot over medium heat, add cooking oil, then sauté minced garlic and ginger until fragrant (about 1-2 minutes).
  2. Add boneless chicken thighs and cook until browned on both sides (approximately 5-7 minutes).
