Description

Ingredients

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 tsp baking powder
  • 1 cup fresh cranberries
  • 1/2 cup butter (for sauce)
  • 1/2 cup sugar (for sauce)
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350F and grease an 8-inch cake pan.
  2. Cream butter and sugar together until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Sift in flour and baking powder; stir until just combined.
  5. Gently fold in fresh cranberries.
  6. Bake for 35-40 minutes or until a toothpick comes out clean.
  7. In a pan, melt butter, stir in sugar and heavy cream, and simmer for 3 minutes.
  8. Pour hot butter sauce over the warm cake before serving.
