Description

A rich and velvety butter bean soup infused with the smoky flavor of rendered bacon. Hearty, protein-packed, and naturally thickened for a comforting winter meal.

Ingredients

Scale
  • 2 cans (15oz) butter beans, drained
  • 4 slices thick-cut smoked bacon, diced
  • 1 medium onion, finely diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and add diced bacon. Fry until crisp and golden, about 7 minutes.
  2. Add diced onion and carrots to the pot. Sauté for 5 minutes until vegetables are soft.
  3. Stir in minced garlic and thyme, cooking for only 1 minute to avoid burning the garlic.
  4. Add the drained butter beans and chicken broth. Bring to a boil, then reduce heat to low.
  5. Simmer gently for 15-20 minutes, stirring occasionally.
  6. Use a potato masher to crush about 25% of the beans directly in the pot to thicken the soup.
  7. Season with salt and pepper to taste and serve hot with crusty bread.
