Description

A traditional Polish comfort soup featuring a unique blend of fermented pickles and rich cream. Tangy, velvety, and aromatic with fresh dill.


Ingredients

Scale
  • 2 tbsp unsalted butter
  • 1 medium onion, finely diced
  • 2 carrots, peeled and diced
  • 1 cup fermented pickles, coarsely grated
  • 4 medium potatoes, peeled and cubed
  • 6 cups vegetable or chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat and sauté onions and carrots until softened.
  2. Add grated pickles to the pot and cook for 5 minutes until slightly caramelized.
  3. Pour in the broth and add cubed potatoes. Simmer for 15-20 minutes until potatoes are tender.
  4. Stir in minced garlic and cook for another 2-3 minutes.
  5. Remove pot from heat. Temper the sour cream by mixing it with a ladle of hot broth, then stir the mixture back into the soup.
  6. Stir in fresh dill and season with salt and pepper to taste.
