Description
A traditional Polish comfort soup featuring a unique blend of fermented pickles and rich cream. Tangy, velvety, and aromatic with fresh dill.

- 2 tbsp unsalted butter
- 1 medium onion, finely diced
- 2 carrots, peeled and diced
- 1 cup fermented pickles, coarsely grated
- 4 medium potatoes, peeled and cubed
- 6 cups vegetable or chicken broth
- 3 cloves garlic, minced
- 1/2 cup sour cream
- 1/4 cup fresh dill, chopped
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat and sauté onions and carrots until softened.
- Add grated pickles to the pot and cook for 5 minutes until slightly caramelized.
- Pour in the broth and add cubed potatoes. Simmer for 15-20 minutes until potatoes are tender.
- Stir in minced garlic and cook for another 2-3 minutes.
- Remove pot from heat. Temper the sour cream by mixing it with a ladle of hot broth, then stir the mixture back into the soup.
- Stir in fresh dill and season with salt and pepper to taste.
