Description

A bright and creamy pasta dish featuring a light ricotta and lemon sauce. Perfect for a quick, refreshing dinner that tastes like it came from a restaurant.


Ingredients

  • 1 lb spaghetti or linguine
  • 1 cup whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1/2 cup reserved pasta water
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until al dente.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant but not brown.
  4. Reserve 1 cup of pasta water, then drain the pasta.
  5. Lower skillet heat and stir in ricotta and Parmesan cheese until combined.
  6. Stir in the lemon zest and lemon juice.
  7. Gradually whisk in reserved pasta water until the sauce is smooth and creamy.
  8. Add the cooked pasta to the skillet and toss over low heat for 1-2 minutes until coated.
  9. Stir in chopped parsley and season with black pepper and salt.
