- 1 lb spaghetti or linguine
- 1 cup whole milk ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 large lemon, zested and juiced
- 1/2 cup reserved pasta water
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant but not brown.
- Reserve 1 cup of pasta water, then drain the pasta.
- Lower skillet heat and stir in ricotta and Parmesan cheese until combined.
- Stir in the lemon zest and lemon juice.
- Gradually whisk in reserved pasta water until the sauce is smooth and creamy.
- Add the cooked pasta to the skillet and toss over low heat for 1-2 minutes until coated.
- Stir in chopped parsley and season with black pepper and salt.
