- 4 cups cooked turkey, cubed
- 1 cup wild rice, uncooked
- 4 tbsp butter
- 1/4 cup all-purpose flour
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1/2 cup heavy cream
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat; sauté onion, carrots, and celery until soft.
- Stir in flour and cook for 2 minutes to create a golden roux.
- Gradually whisk in chicken broth until smooth and simmering.
- Add uncooked wild rice and thyme; cover and simmer for 40-45 minutes until rice is tender.
- Stir in cubed turkey and heat through for 5 minutes.
- Remove from heat and stir in heavy cream; season with salt and pepper.
