Ingredients

  • 4 cups cooked turkey, cubed
  • 1 cup wild rice, uncooked
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat; sauté onion, carrots, and celery until soft.
  2. Stir in flour and cook for 2 minutes to create a golden roux.
  3. Gradually whisk in chicken broth until smooth and simmering.
  4. Add uncooked wild rice and thyme; cover and simmer for 40-45 minutes until rice is tender.
  5. Stir in cubed turkey and heat through for 5 minutes.
  6. Remove from heat and stir in heavy cream; season with salt and pepper.
