- 1 lb ground turkey
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp dried oregano
- 4 oz cream cheese, softened
- 1/2 cup heavy cream
- 4 cups chicken broth
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 tbsp lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat. Brown the ground turkey until fully cooked, about 7-10 minutes.
- Add diced onion and minced garlic to the pot and sauté until translucent.
- Stir in cumin, chili powder, and oregano, cooking for 1 minute to bloom the spices.
- Pour in chicken broth, diced green chilies, and drained white beans. Bring to a boil, then simmer on low for 20 minutes.
- Reduce heat to low. Stir in softened cream cheese and heavy cream until smooth and fully incorporated.
- Remove from heat and stir in lime juice and fresh cilantro. Season with salt and pepper.
