Description

Soft, chewy sugar cookies decorated with vibrant, glossy icing to look like creepy eyeballs. A visual showstopper for any Halloween party platter.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups powdered sugar
  • 2 tablespoons corn syrup
  • 12 tablespoons milk
  • Red, blue, or green food coloring
  • Black food coloring

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. Stir in flour, baking soda, and salt until just combined.
  5. Chill dough in the refrigerator for 30 minutes.
  6. Roll dough into 1-inch balls and place on the baking sheet.
  7. Bake for 10-12 minutes or until the edges are barely golden.
  8. Cool cookies completely on a wire rack.
  9. Mix powdered sugar, corn syrup, and milk to create a smooth icing.
  10. Divide icing and color one portion white, one portion a bright color, and one portion black.
  11. Pipe a white circle on each cookie, then add a colored iris and a black pupil in the center.
