- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups powdered sugar
- 2 tablespoons corn syrup
- 1–2 tablespoons milk
- Red, blue, or green food coloring
- Black food coloring
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract.
- Stir in flour, baking soda, and salt until just combined.
- Chill dough in the refrigerator for 30 minutes.
- Roll dough into 1-inch balls and place on the baking sheet.
- Bake for 10-12 minutes or until the edges are barely golden.
- Cool cookies completely on a wire rack.
- Mix powdered sugar, corn syrup, and milk to create a smooth icing.
- Divide icing and color one portion white, one portion a bright color, and one portion black.
- Pipe a white circle on each cookie, then add a colored iris and a black pupil in the center.
