Ingredients

  • pounds small new potatoes
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Boil potatoes in salted water for 8-10 minutes until tender.
  3. Drain, cool, and smash each potato half with a fork.
  4. Toss smashed potatoes with olive oil, garlic, thyme, salt, and pepper.
  5. Spread on a parchment-lined sheet pan and bake for 20 minutes, flipping halfway.
  6. Sprinkle grated Parmesan over the potatoes and bake an additional 3-4 minutes until melted and golden.
