Ingredients

  • 3 lbs Chuck Roast, cubed
  • 12 oz wide egg noodles
  • 4 cups beef broth
  • 4 cloves garlic, minced
  • 3 tbsp tomato paste
  • 2 chipotle peppers in adobo, minced
  • 1 tbsp adobo sauce
  • Salt and pepper to taste
  • 2 tbsp vegetable oil for searing

Instructions

  1. Season beef with salt and pepper, then sear in oil until browned on all sides.
  2. Place seared beef in the crockpot along with beef broth and minced garlic.
  3. Cook on low for 8 hours until the beef is tender.
  4. Mix tomato paste and minced chipotle peppers with adobo sauce in a small bowl.
  5. Boil egg noodles in salted water until just under al dente, then drain.
  6. Stir noodles into the beef and broth; swirl the chipotle-tomato mixture on top.
