- 3 lbs Chuck Roast, cubed
- 12 oz wide egg noodles
- 4 cups beef broth
- 4 cloves garlic, minced
- 3 tbsp tomato paste
- 2 chipotle peppers in adobo, minced
- 1 tbsp adobo sauce
- Salt and pepper to taste
- 2 tbsp vegetable oil for searing
Instructions
- Season beef with salt and pepper, then sear in oil until browned on all sides.
- Place seared beef in the crockpot along with beef broth and minced garlic.
- Cook on low for 8 hours until the beef is tender.
- Mix tomato paste and minced chipotle peppers with adobo sauce in a small bowl.
- Boil egg noodles in salted water until just under al dente, then drain.
- Stir noodles into the beef and broth; swirl the chipotle-tomato mixture on top.
