- 6 slices bacon
- 1 cup dried Navy beans
- 2 cups water
- 1 medium yellow onion, diced
- 2 garlic cloves, minced
- 1/2 cup molasses
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 2 tsp mustard
- 2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F.
- Render bacon until crisp, then remove and reserve drippings.
- Sauté onions in drippings until translucent.
- Add minced garlic and dried beans, then stir.
- Whisk molasses, ketchup, brown sugar, mustard, paprika, salt, and pepper; pour over mixture.
- Transfer to baking dish, cover and bake for 90 minutes, stirring halfway.
- Uncover and bake for another 10 minutes to brown the glaze.
- Serve with crusty bread or a fresh side salad.
