- 3 cups cooked chicken, cubed

Instructions
- Melt butter in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
- Stir in minced garlic and thyme, cooking for 1 minute until fragrant.
- Sprinkle in flour and whisk for 2 minutes to create a roux.
- Slowly pour in chicken broth, whisking constantly until the soup thickens.
- Add cubed cooked chicken and simmer for 5-10 minutes.
- Stir in heavy cream and frozen peas; heat through for 2-3 minutes.
- Season with salt and pepper, then serve hot.
