- 1 lb ground beef
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 cup heavy cream
- 2 cups medium pasta shells
- 2 cups sharp cheddar cheese, freshly grated
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it into small pieces.
- Add the diced onion and minced garlic to the pot. Sauté for 3-5 minutes until the onion is translucent.
- Stir in the tomato paste and cook for an additional 2 minutes to caramelize the paste.
- Pour in the beef broth and heavy cream. Stir well, scraping the bottom of the pot to release any browned bits.
- Add the dry pasta shells, salt, and pepper. Bring to a gentle simmer, cover, and cook for 10-12 minutes, stirring occasionally.
- Remove the pot from heat. Stir in the grated cheddar cheese until fully melted and smooth.
