Ingredients

  • 1 lb ground beef
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 cups medium pasta shells
  • 2 cups sharp cheddar cheese, freshly grated
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it into small pieces.
  2. Add the diced onion and minced garlic to the pot. Sauté for 3-5 minutes until the onion is translucent.
  3. Stir in the tomato paste and cook for an additional 2 minutes to caramelize the paste.
  4. Pour in the beef broth and heavy cream. Stir well, scraping the bottom of the pot to release any browned bits.
  5. Add the dry pasta shells, salt, and pepper. Bring to a gentle simmer, cover, and cook for 10-12 minutes, stirring occasionally.
  6. Remove the pot from heat. Stir in the grated cheddar cheese until fully melted and smooth.
