Description

  • 2 lbs beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced into rounds
  • 3 large potatoes, cubed
  • 3 stalks celery, sliced
  • 6 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add beef chunks and brown on all sides, then remove meat from the pan.
  2. In the same skillet, sauté diced onion and minced garlic for 3-5 minutes until translucent.
  3. Place the browned beef and sautéed aromatics into the slow cooker.
  4. Add the sliced carrots, cubed potatoes, and sliced celery to the pot.
  5. Pour in the beef broth and Worcestershire sauce, stirring gently to combine.
  6. Stir in the dried thyme, salt, black pepper, and add the bay leaf on top.
  7. Cover and cook on Low for 7-8 hours or High for 4 hours until beef is tender.
  8. Remove the bay leaf before serving.
