- 2 lbs beef stew meat, cubed
- 2 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 carrots, sliced into rounds
- 3 large potatoes, cubed
- 3 stalks celery, sliced
- 6 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add beef chunks and brown on all sides, then remove meat from the pan.
- In the same skillet, sauté diced onion and minced garlic for 3-5 minutes until translucent.
- Place the browned beef and sautéed aromatics into the slow cooker.
- Add the sliced carrots, cubed potatoes, and sliced celery to the pot.
- Pour in the beef broth and Worcestershire sauce, stirring gently to combine.
- Stir in the dried thyme, salt, black pepper, and add the bay leaf on top.
- Cover and cook on Low for 7-8 hours or High for 4 hours until beef is tender.
- Remove the bay leaf before serving.
