- 1 lb chorizo sausage, sliced
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 eggs, beaten
- ½ cup sour cream
- 1 cup chicken broth
- 2 tbsp fresh parsley, chopped
- ¼ cup grated parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and oil a 9×13 inch baking dish.
- Cook sliced chorizo in a skillet until crisp, set aside.
- Sauté garlic and onion in the same skillet until translucent.
- Whisk together cream cheese, cheddar, mozzarella, sour cream, eggs, broth, parsley, salt, and pepper until smooth.
- Fold cooked chorizo and sautéed aromatics into the cheese mixture.
- Transfer everything to the prepared dish, top with parmesan, and bake 25–30 minutes until bubbly.
- Allow to cool before serving.
