Ingredients

  • 1 lb chorizo sausage, sliced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 eggs, beaten
  • ½ cup sour cream
  • 1 cup chicken broth
  • 2 tbsp fresh parsley, chopped
  • ¼ cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and oil a 9×13 inch baking dish.
  2. Cook sliced chorizo in a skillet until crisp, set aside.
  3. Sauté garlic and onion in the same skillet until translucent.
  4. Whisk together cream cheese, cheddar, mozzarella, sour cream, eggs, broth, parsley, salt, and pepper until smooth.
  5. Fold cooked chorizo and sautéed aromatics into the cheese mixture.
  6. Transfer everything to the prepared dish, top with parmesan, and bake 25–30 minutes until bubbly.
  7. Allow to cool before serving.
